Soba” is a food for the common people, and I feel that the soba I eat in my daily life is just to fill my stomach.

Therefore, when I am busy and have no time when I am out, I often go to standing buckwheat noodle restaurants such as “Komoro Soba,” “Fuji Soba,” and “Yudetaro” in Tokyo.

However, soba has become a kind of luxury food, and the three major soba restaurants in Edo (Tokyo), Sarashina, Yabu, and Sunaba, charge a reasonable price.

I visit Suwa in Nagano, Shinshu, every month, and being a sneaky foodie, I used to frequent restaurants that serve delicious soba, eel, and delicious bento boxes for lunch, as well as popular French restaurants among the locals.

This time it was too early in Suwa for lunch, so I went to a restaurant called “Ichi” in Yamane-cho, Hokuto City, Yamanashi, on my way back to Tokyo.

The exterior of the restaurant does not look like a “soba restaurant” at all, and there are only two kinds of dishes on the menu, so it is not a restaurant where you can enjoy mori-soba quickly and smoothly with tsuyu (sauce).

This restaurant specializes in fried vegetable soba noodles.

We fry vegetables slowly for more than 20 minutes. Please refrain from coming if you don’t have time! We don’t have a menu that can be done quickly!” and so, “Please refrain from serving over 6 people.”

Such warnings are posted in spots along the pathway through the dense bamboo grove that leads to the restaurant.

The approach to the entrance of the store in the old house is narrow, just wide enough for one person to walk.

The restaurant opens at 11:00 and closes at 13:30.

It is very clear and interesting that the store has a very clear policy of choosing its customers according to the tastes and preferences of the owner of the store.

When you enter through the entrance, you are made to wait in a waiting room. This room is like a reading room, lined with books on interesting themes, and it is such a relaxing space that when you pick up a book and read it, you will want to stay here and read it all the time.

I ordered the “Tororo soba with fried vegetables” and my friend ordered the “Tororo soba with fried vegetables and grated radish.

The ingredients included potatoes, carrots, broccoli, burdock root, eggplant, string beans, komatsuna, zucchini, and many others.

The vegetables tasted “sweet! Delicious” “The taste of the vegetables comes through as it is”…

It is served with soba noodles dipped in this dipping sauce.
