We had a lunch of purified Japanese food!

The other day, I was invited to the home of a Japanese food culture researcher whose ancestors were given the kitchen of the Maeda clan of Kaga Hyakumangoku, and whose family lineage includes cooking for the feudal lord.
I was invited to the home of a Japanese food culture researcher.
We had a “samurai’s dining table” lunch.

The Samurai’s Table is based on the idea of “health and longevity” that the feudal lords were particular about,
The dishes are prepared using condiments and medicinal herbs that were actually consumed in that period as ingredients.
The dishes are prepared as “period-inspired reproductions”. The dishes are prepared as “period-inspired reproductions” using condiments and medicinal herbs that were actually consumed in that period, and are the basis of “Japanese food”.

I heard that there are “Three Principles of the Samurai’s Table”,
1, The simple daily meals of the samurai
2, Feast of feasting

  1. To create a rhythm in one’s life by incorporating the seasons and social conditions.
    The “Three Principles” are

The menu is as follows
1,Handmade pickled plums from Kaga
2,Vinegared cucumber, pickles and dried radish with pineapple jelly
3,Buri Daikon (local dish of Kanazawa)
4,Winter melon, shiitake mushroom, sweet potato and string bean with starchy sauce (with carrot)
5,Broiled lotus root, sweet potato, dried tofu and deep-fried tofu with cream sauce (with French bread)
6,Miso soup (Chinese cabbage and leek)
7,Purification rice gruel (azuki-bean porridge)
8,Wagashi (Japanese sweets)
Tea, pesticide-free chrysanthemum tea

No matter how much you eat, it does not burden your stomach or make you bloated.
It was a dish that was gentle to the body, as if the body was being purified with each bite.

Thank you for the meal! Finished!
