I tasted a raging dish that no one has ever seen before, both in appearance and taste…!
Today we visited “VELROSIE”, an outstandingly delicious Chinese restaurant in Kyoto.
In Japanese cuisine, the “aesthetics of subtraction” is a technique of drawing out the characteristics of ingredients to the utmost limit to double the deliciousness….
Here, the combination of “addition” rather than “subtraction” allowed us to fully experience innovative ideas and advanced cooking techniques that had never been seen before.
Chef Iwasaki’s creative flair overflowed into the dishes that came out one after another… and came out… and came out… and came out… and came out…
The dishes were amazing, full of surprises and impressions!
The menu, which changes monthly, also requires precise calculation and bold imagination in the combination of ingredients.
The course meal, which demonstrated Chef Iwasaki’s true spirit, was amazing, right down to the final dessert! That is the only word I can say to describe it.
The lunch cosiness is also excellent!
I will revisit when I come to Kyoto again.
