The “Boat” at Bukkouji Temple, Kyoto, celebrates its 1st anniversary !

The owner, Mr. Funaki, is from the 3-star Michelin restaurant “Koju” in Ginza, Tokyo.

Each dish served is a gem that conveys the owner’s feelings!
The proprietress is a former geisha maiko from Gion, and is a lovely person!

The aroma of the “matsutake” mushrooms and the “hamo” (a type of duckling), which is still in its prime, are in perfect harmony with each other!

 

Mr. Takao Funaki, the owner of the restaurant, showed us his favorite kitchen knives.
From left to right, “Sakai Shukoh”, middle “Kohodo”, and right “Shodai Shokichi” (for cutting pike conger pike conger pike).
The “Kohodo” in the middle is the highest peak of water-quenched and hand-quenched kitchen knives, and is generally said to be difficult to find.
It is said that it is difficult to obtain.
